This past weekend, we celebrated (a couple of days early) my parents’ wedding anniversary in grand style.
My mother made a delicious dinner of glazed pork tenderloin, roasted sweet and white potatoes, and Brussels sprouts in browned butter. It was a glorious combination of flavors with the sweet (and slightly mustardy) glaze of the pork, the crisp potatoes and the mellow sprouts. But, once again, the real show stopper was the dessert, and, I must say my mother really outdid herself.
This four layer chocolate cake is frosted with a homemade caramel butter cream frosting and adorned with caramel-glazed pecans sprinkled with just a bit of sea salt. Where do I begin? It’s sheer perfection. Look how beautifully it cut! The frosting is lightly sweet with the softness of caramel and the cake has the ideal crumb—moist, thick and dense. Of course, the combination of chocolate and caramel with a hint of salt is perfection in itself, but when you add these sumptuous textures, the experience is culinary gold!
