Treat of the Week: Flavors of Fall





With autumn officially upon us, my mother decided to prepare a Sunday dinner with all of the notes of fall.  Personally, I always associate this time of year with the flavor of freshly harvested apples.  So, I was very happy to see my mother had plotted out a meal which featured apples prominently.  




This lovely pork roast is both sweet and savory, slow-cooked with autumn apples and served with a rick sauce and a side of mustard-infused sour cream.  The result is a lively, tender roast which offers a rich combination of flavors in each bite.  The gorgeous apples were served along side the pork, soft and bursting with juices.  Bright, crisp broccoli, and fluffy mashed potatoes contributed exciting textures and flavors to the dinner.




The meal concluded with homemade chocolate pudding served up with thick squares of shortbread.  Made in a clever pan which creates bas relief patterns atop each shortbread square, these crumbly, buttery treats were a delicious conclusion to the meal.  I love my mother's shortbread recipe and was delighted to see she also made chocolate shortbread, creating a delicious and attractive checkerboard.

Another healthy, comforting meal. Everyone should eat like this. A nice hunk of shortbread would be a good thing to have right now. Beautiful!

A favorite combo in our house. Think I'll make me version tonight. Maybe I'll try a shortbread recipe tomorrow.
