Treat of the week: Brazilian Roast and Banana Cake




Now, I'm not really a fan of warm weather. As I've mentioned before sunshine and hot breezes are my idea of hell. I don't understand why people enjoy being hot. I'm always hot. No matter what the temperature, I'm boiling and I hate it. However...there's one thing about warm weather that I like. The food. This is really because I just enjoy food in general.




Owing to the warm weather, the grill is in good use. And, I can think of no better use for it than using it to make my mother's special Brazilian Beef recipe. A lovely roast beef, marinated to perfection in a savory homemade Brazilian glaze, the beef was happily joined by grilled zucchini and a lovely big bowl of pasta with fresh grape tomatoes and a homemade basil pesto.








And, really, what's a springtime meal without a lovely, fresh dessert. This one happens to be a favorite of mine, and of Bertie Dog's. You see, Bertie likes bananas quite a lot. And, he likes cake quite a lot. We both do. So, this dessert is the perfect "mash-up."

The fluffy cake has the flavor of a luscious banana bread, but with the fluffiness one can only achieve with a cake made from scratch. The thick, creamy icing has a hint of banana in it. I’m told that lemon juice keeps the banana from turning brown in the icing. Clever. Topped with toasted, candied nuts (with just a hint of salt), this delightful layer cake holds up well over a few days, and, in fact, is even better the next day. If, like me and Bertie, you’re a fan of bananas and cake—this is the perfect desert for you.

You see, it’s these little pleasures which make life more beautiful--even if the weather is warm.
