Treat of the Week: Herbs and Spices

A dinner of filet mignon was in order this weekend.  Melting pats of compound butter adorned the perfectly-cooked, tender beef which was served with crunchy-friend shallots.  Herbed mashed potatoes and fresh spinach cooked with a clove of garlic were the perfect side dishes.  The compound butter also found its way onto the scrumptious drop biscuits which my mother made from scratch--a take on the traditional cheddar biscuit, these were cheddar and gorgonzola and were sheer perfection!

After dinner, we revisited a family favorite—my mother’s Applesauce Cake. To simply refer to this masterpiece as an “applesauce cake” is to not do it justice. It’s so much more than that. A dense, incredibly moist Bundt cake, this delightful confection is spiced to perfection with cinnamon and cardamom. Cardamom offers a rich, sharp taste which brilliantly compliments the creaminess afforded the cake from the applesauce. If you’re a fan of spice cake, this is definitely for you.

With a wonderful crumb, the cake is tender and melts in your mouth. It’s as beautiful as it is delicious  Dusted with powdered sugar, it was served with freshly whipped cream.

This is the kind of meal I'd rather have than what I've been having lately. I am having to act like the social butterfly this week. Not my hobby. Give me meat and cake!

I will be thinking about this tonight while I heat up my frozen Lean Cuisine. This is what dinner should always be.
