Treat of the Week: A Columbus Day Celebration






A hearty and filling Italian dinner allowed Bertie and me to remember Columbus Day this weekend as we enjoyed my mother's handiwork.  Grilled chicken topped with mozzarella cheese and vodka sauce was joined by fine angel-hair pasta adorned with the same vibrant, flavorful sauce.  A baked mushroom casserole and cool, beautiful individual salads completed the meal.






Afterwards, a tall chocolate pound cake was our treat.  Rich with flavor, the cake boasted a chocolate glaze and was runway-ready with vibrant yellow flowers on winding stems of light-green icing.  Beautiful!
